Traditional Marmalade
Region: Scotland

Sweet and bitter, and full of thick cut peel – there's nothing like home-made marmalade on toasted home-baked bread.

One of the joys of travelling around Britain lies in tasting each region.
Some areas have world-famous creations – think Kendal Mint Cake, or Cornish Pasties – but many more have local specialities which remain all but unknown just a few miles outside of the area.
It's long been a real pleasure of mine to find a little local cafe or deli and seek out something that I've never seen before – and rather like a holiday romance, enjoy it knowing that once I'm home, all that will be left are the memories.
